Tortellini Soup
This is the perfect soup for a cold day!
Brown 1lb/package of mild ground italian sausage. Follow the same directions as the Ground Beef Basics. Add 1/2 a diced yellow onion and 4 cloves of minced garlic, and sauté it all together in a big soup pot.
Once the meat is fully cooked through and the onions are clear (instead of white), add 1 box of chicken broth. Add 1 3/4 cups water. Add 2 cans (15oz each) of undrained diced tomatoes. Bring to a boil.
Once boiling, add a package of frozen or refrigerated cheese tortellini and cook for 6mins or until the tortellini is plump and soft.
Turn heat down to low and add half a bag of baby spinach. Stir it in, and it will soften up in about 60secs. Serve with fresh parmesan cheese on top.
