Tortilla Soup

Crock pot meal!! This is one you can toss in your crockpot and come back to later! It's literally just a "dump it in there" and go meal. So, add the following items to your crockpot and cook on low for 6-8hrs.

1 package of chicken tenders

1 can of mild red enchilada sauce

1 can of undrained diced green chilis (mild and fire roasted is how they usually come, but watch out to not accidentally grab the spicy ones)

2 can of drained black beans (be sure to run LOTS of water down your sink drain after emptying out these cans because it'll smell if not)

1 can of fire roasted diced tomatoes

1 can of drained corn

2 cups of chicken broth

1tsp garlic powder, 1tsp onion powder, 1tsp cumin, 1 tsp salt 





After it has cooked for 6-8hrs, drag a big fork through it multiple times to grab the chicken and shred it into chunks. Serve with tri-color tortilla strips, cheese, sour cream etc. This can stay in your fridge as leftovers for 3 days.
