Polar Bear Paws
Irresistible Christmas Candy, or just a yummy treat that's perfect for gifting or taking to a party!
Spoon little "paws" onto a cookie sheet with either parchment paper or wax paper. Once they're all spooned onto the cookie sheet, place them into the fridge for 1hr.
Doing them about 3 at a time is important because the caramel gets warm and gooey pretty fast. So if you take the entire tray out of the fridge it'll get very messy and difficult to work with. Also, the vanilla topping will start to cool and thicken so probably once or twice during the process you'll want to warm it up again so it's smooth. You'll know you need to do this when it doesn't coat smooth and starts to get lumpy.
Add unwrapped caramels, 3 tbsp heavy whipping cream and 1 tbsp butter into a small bowl. Microwave for 30 seconds, then stir. Repeat until it's smooth and creamy.
Add 1 1/4 cup roasted cashews and stir. Let the mixture sit until it starts to thicken up. Stir every few minutes while it's thickening up. You'll be able to see and feel the difference.
Put the vanilla candy melts into a small bowl. Microwave them on medium power for 30 seconds, then stir. Repeat until it's smooth and creamy.
Take 3 candies out of the fridge at a time and coat them in the vanilla topping, top and bottom. Place them back on parchment paper and put them back into the fridge.
Once they're coated and have been in the fridge for another hour they're all set! They can now be taken out to room temperature and will last for several days on the counter!
